Use a muffin tin either with fun cupcake papers, or sprayed with non-stick coating to make mini-meatloaves! “Frost” with mashed potatoes, and sprinkle with mixed veggies of corn, peas & carrots to decorate the top. The result is a fun, finger-food all-in-one meal! Tip- try a layer of ketchup or tomato sauce underneath the mashed potatoes for a more moist meal.
Grammy’s Meatloaf Recipe
Preheat the oven to 400.
Mix together 1 pound ground beef, turkey, or meatless crumbles
one beaten egg
¼ cup diced onion
¼ cup red pepper (optional)
½ teaspoon salt
¼ tsp pepper
½ teaspoon garlic powder
¾ cup oats
1 cup tomato juice or tomato soup.
Spoon mixture into a 12 muffin cups. Spread a layer of ketchup or tomato soup on top.
Bake for 20 minutes, frost with mashed potatoes, and sprinkle with the mixed veggies!
