Grab n Go Breakfast Cookies

This healthy finger food will be a favorite for families on the go (even when there is no place to go!). Have your child help measure, mix, and munch!

Preheat oven to 350 degrees. Grease or spray a cookie sheet.

Mix ½ cup softened butter with ⅔ cup brown sugar until creamy. Use a carefully supervised electric mixer for more excitement! Add in 2 eggs and ½ teaspoon vanilla and mix until combined.

In a small separate bowl, mix 1 Cup whole wheat or whole grain flour, with ½ teaspoon baking powder, ¼ teaspoon baking soda, ¼
teaspoon salt, and 1 cup oats.

Stir flour mixture into the egg mixture. Add 1 Cup dried fruit- craisins, cherries, raisins, chopped apricots, dried banana chips, etc. Add ½ cup coconut or chopped nuts of any variety (optional).

Drop the cookie dough onto the prepared baking sheet in ¼ cup mounds (an ice cream scoop works well for this) about two inches apart. Bake for 12-15 minutes just until the edges & bottoms begin to brown.
Enjoy for as long as they last!
